Heather's Meatloaf - Freezer Meal

I have no idea who Heather is, and I failed to save the link to the website where I found this recipe, so I can't give credit. You can do this with any meatloaf recipe.

What You Need:
  • 1 lb ground beef (93% lean)
  • 1 lb jimmy dean spicy sausage (I used 1 lb of Isernio's sausage; a local brand that has no additives or preservatives)
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/2 cup chopped onions
  • 1 egg
  • 1/2 - 1 cup bread crumbs
What You Do:
  1. Using clean hands, mix together all ingredients in a bowl and place in a foil loaf pan designed for freezing (found in the baking aisle of grocery store).
  2. Using a Sharpie, write on the lid:  Thaw, bake at 350 degrees for 1 hour.
  3. Freeze.
  4. Before baking, cover with your favorite meatloaf topping (such as ketchup, BBQ sauce, marinara sauce, etc) if desired.
